Beef Enchilada Casserole
1 lb. lean ground beef
1 1/2 cups frozen corn
1 can (19 oz) or 2 cans (10 oz each) enchilada sauce
1 can chopped green chilies (4.5 oz)
1 pkg. corn tortillas, cut into 1/2" strips (6 oz)
2 oz. finely shredded cheddar cheese
Heat oven to 375. Spray 8" square 2 quart glass baking dish with nonstick spray. Brown beef in large skillet over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Drain. add corn, enchilada sauce and green chiles; mix well. Spoon 1/4 of beef mixture into sprayed baking dish. Top with 1/3 of tortilla strips. Repeat layers two time, ending with beef mixture. Cover with foil. Bake at 375 for 40 minutes. Uncover;sprinkle with cheese. Bake another 5 minutes or until casserole is bubbly and cheese is melted. Serves 6
