4 7 inch flour tortillas
nonstick spray coating
12 ounces ground raw chicken
2 teaspoons chili powder
1 8oz can reduced-sodium tomato sauce
2 tablespoons salsa
2 medium tomatoes
1 1/3 cups shredded lettuce
1/3 cup shredded reduced-fat cheddar cheese
Place tortilas in a single layer on a baking sheet. Spray with nonstick coating.
Place in a cold oven. Set oven to 450 degrees. Bake for 10 to 12 minutes or
until crisp and lightly covered.
Meanwhile, cook and stir chicken and chili powder in a large skillet over medium
heat until chicken is no longer pink. Stir in tomato sauce and salsa; heat
through.Chop the tomatoes. Spoon the chicken mixture onto tortillas. Top with
lettuce, tomatoes, and cheese. Makes 4 servings.
