ingredients
4 loin or chump lamb chops
salt and pepper
1 tbls (15 g) 1/2 oz butter or margarine
2 teaspoons dried mint
3 tablespoons thick honey
1/2 teaspoon grated lemon rind (optional)
method
1. Rub the chops with salt and pepper and arrange on the grill rack.
2. Dot with half the butter or margarine and grill for 8 to 10 minutes or until well browned.
3. Turn over, dot with the rest of the fat and continue cooking for 3 to 4 minutes.
4. Mix together the mint, honey and lemon rind, if used, and spread over the chops. Continue cooking for about 5 minutes or until the chops are cooked through.
5. Serve with the pan juices spooned over.
