16 oz. spaghetti
1 T butter
1/2 lb. sweet Italian sausage, casings removed
3 eggs
1 pkg. (10 oz.) chopped spinach, thawed &
squeezed dry
1 cup ricotta cheese
2 T grated Parmesan cheese
salt and pepper to taste
1/8 tsp. ground nutmeg
Cook spaghetti according to pkg. directions. Drain, then stir in butter.
Meanwhile, heat medium nonstick skillet over medium-high heat. Crumble in
sausage; cook until lightly browned and cooked through, about 8 minutes.
Cool 5 minutes. Meanwhile, coat a 9 inch pie pan with nonstick cooking
spray. In large bowl, lightly beat eggs. Stir in spinach, ricotta, Parmesan,
salt, pepper and nutmeg until combined. Stir in spaghetti and sausage;
transfer to pie pan. Bake at 350 degrees until eggs set and top begins to
brown, about 25-30 minutes.
