4 c water
1 c cornmeal
1 tsp salt
1 lb Italian sausage links
2 garlic cloves, minced
1 can (14 1/2 oz) Italian stewed tomatoes
1 can (6 oz) tomato paste
2 T minced fresh parsley
1/4 c shredded Parmesan cheese
Combine water, cornmeal and salt in a double boiler or heavy saucepan.
Bring to a boil, stirring constantly. Reduce heat. Cover and simmer for 1
1/2 hours, stirring occasionally.
Meanwhile, brown sausage and garlic in a large skillet. Drain and cool
slightly. Cut sausage into 1" pieces and return to skillet. Add tomatoes,
tomato paste and parsley. Bring to a boil. Remove from heat.
Spread half the cornmeal mixture in a serving dish. Top with half of the
sausage mixture. Repeat layers. Sprinkle with cheese and serve
immediately.
Makes 4 servings.
