2 green bell peppers, cut into thin
strips
1 red bell pepper, cut into thin strips
1 yellow bell pepper, cut into thin strips
2 medium onions, halved and cut intc
thin wedges
1 to 11/2 pounds skinless, boneless turkey breast strips
2 teaspoons ground cumin
2 teaspoons chili powder
2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne
1/4 cup plus 2 tablespoons fresh lime juice
1. In a 3 1/2-quart electric slow cooker, combine all the bell peppers with
the onions.
In a small bowl,. mix together the turkey strips, cumin, chili. powder,
garlic powder, paprika, black pepper, cayenne, and 1/4 cup lime juice. Turn
into the slow cooker over the vegetable mixture.
2. Cover and cook on the low heat setting 2 hous. Stir and cook, covered, 1
to1 1/2 hours longer, or until the turkey is cooked through. Just before
serving, stir in the remaining 2 tablespoons lime juice.
