Basic Cheesecake
Basic Graham Cracker Crust:
1 1/2 cups graham cracker or cookie crumbs
1 stick melted butter
1 T. powdered sugar
Mix together the crumbs, melted butter and sugar and press into the bottom of a buttered 8 or 9" springform pan. Hint: For a crunchy crust, bake crust at 350 for 10 minutes. Remove the crust from the oven and prepare the filling while the crust cools.
Basic Filling:
3 pkgs. (8 oz each) cream cheese, at room temperature
1 cup sugar
5 T. sour cream
1 T. vanilla
4 eggs, beaten
Beat the cream cheese, sugar, sour cream and vanilla for about 15 minutes or until the mixture is very light and fluffy. Add the beaten eggs and mix until just blended. Do not overbeat eggs in the cheese mixture; it makes cheesecake heavy and dry. Pour the cheese mixture into the prepared crust and bake the cheesecake at 350 for 30 minutes,. Turn the oven off and leave the cheesecake in the oven for 30 minutes with the oven door closed. Remove the cheesecake from the oven,then refrigerate 4 your or overnight before decorating. Serves 12 to 18.
