Impossibly Easy Lemon Macaroon Pie
3/4 cup Bisquick mix
1 cup milk
1/2 cup sugar
2 T. butter or margarine, softened
2 t. grated lemon peel
2 T. lemon juice
1 t. vanilla
2 eggs
1/2 cup flaked coconut
Heat oven to 350. Spray 9" pie plate with cooking spray. Stir all ingredients except coconut in medium bowl with wire whisk or fork until blended. Pour into pie plate. sprinkle with coconut. Bake 30 to 35 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes. Store covered in refrigerator.
Reduced Fat Version: use reduced fat Bisquick and fat free milk. Substitute 3 egg white or 1/2 cup fat free cholesterol free egg product for the eggs.
