Base and Topping:
2 1/2 cups quick-cooking or regular oats
3/4 cup flour
3/4 cup packed brown sugar
1/2 tsp baking soda
3/4 cup butter or regular margarine, melted
Filling:
4 oz. unsweetened baking chocolate
2/3 cup butter or regular margarine
2 cups sugar
1 tsp vanilla
4 eggs
1 1/4 cups flour
1 tsp baking powder
1 tsp salt
Heat oven to 350 F. Grease a 13 x 9 inch pan. In a large bowl, mix oats, 3/4 flour, brown sugar, and baking soda. Stir in the melted 3/4 butter. Reserve 3/4 cup oat mixture for the topping. Press remaining oat mixture in the pan. Bake for 10 minutes. Cool five minutes. Meanwhile, in a 3 quart saucepan, heat the chocolate and 2/3 cup butter over low heat. Stir occasionally until melted. Remove from the heat. Stir in granulated sugar, vanilla, and eggs. Stir in 1 1/4 cups flour, baking powder, and salt. Spread filling over the baked base. Sprinkle with the reserved oat mixture. Bake about 30 minutes or until the center is set and the oat mixture turns golden brown. Do Not Overbake. Cool completely, about two hours.
Yield: about 48 brownies
