Peppermint Brownies

4 oz. chocolate 1 C. margarine
1 ½ C. sugar 4 eggs lightly beaten
½ tsp. peppermint extract 1 C. flour
Frosting :
4 T. butter or margarine or white shortening
2 C. confectioners sugar
2 T. cream or milk
A few drops of green food coloring (optional)
Glaze:
2 oz. chocolate
2 T. margarine or butter
To make brownies: preheat oven to 325°F. Line a 9"x13" baking pan with
aluminum foil, letting the ends of the foil hang over the edge of the pan.
Melt chocolate and margarine in a large pan over hot water or over direct
heat, stirring constantly. Add sugar eggs peppermint extract and flour.
Stir just until blended Spread batter in the prepared pan and bake for
about 25 minutes. Let brownies cool completely, then refrigerate.
Prepare glaze: Melt together chocolate and margarine. Cool slightly. Pour
over frosted brownies and tilt pan to cover frosting completely. Chill
Grasping the foil, remove the brownies from the pan and place on a cutting
board. Using a sharp knife, cut the brownies into bars, wiping the blade
of the knife after each cut.
