Macadamia Nut Cream Pie
Macadamia Nut Cream Pie

1 9-inch pie shell, baked
1 cup sugar
4 T cornstarch
1/4 tsp. salt
3 cups milk
4 egg yolks, lightly beaten
2 T butter
1/2 tsp. vanilla
1 tsp. kahlua
1 cup macadamia nuts, chopped
whipped cream + dash of kahlua for topping
Combine sugar, cornstarch and salt in a saucepan. Stir in milk. Stir over
medium heat to boil. Cook 2 minutes longer. Remove from heat. Stir a few
spoons of hot mixture into egg yolks; return to pan and mix into hot
mixture. Cook and stir 2 minutes. Remove from heat and add butter, vanilla
and kahlua. Stir in well. Cool to room temperature. Cover bottom of
pre-baked pie crust with chopped macadamia nuts (save some for topping).
Fill pie shell with cream filling; sprinkle with additional chopped nuts.
Top with whipped cream flavored with a dash of kahlua.
NOTE: Use unsalted macadamia nuts or rinse off salt and dry nuts in a warm
oven before chopping.
