Apple-Raisin Spice Cake

Cake:
1 cup (250 mL) raisins
2/3 cup (150 mL) chopped walnuts
1-3/4 cups (425 mL) all-purpose flour,divided
1 tsp (5 mL) baking powder
1 tsp (5 mL) baking soda
1/2 tsp (2 mL) salt
1 tsp (5 mL) cinnamon
1 tsp (5 mL) nutmeg
1/4 tsp (1 mL) allspice or cloves
1/2 cup (125 mL) Crisco Shortening
1-1/4 cups (300 mL) lightly packed brown sugar
2 eggs
1 cup (250 mL) apple sauce
Icing:
1/4 cup (50 mL) Crisco Shortening
2 cups (500 mL) sifted icing sugar
2-3 tbsp (30-45 mL) milk
1 tsp (5 mL) vanilla
Walnuts to decorate, optional
Cake:
1. Toss raisins and nuts with 125 mL (1/2 cup) flour to coat. Set aside.
2. Combine remaining flour with next 6 dry ingredients. Mix well.
3. Cream shortening, brown sugar and eggs in large bowl on medium speed with
electric mixer until light and fluffy.
4. Add dry ingredients alternately with apple sauce, mixing lightly after
each addition.
5. Stir in raisin mixture; mix well.
6. Spread batter, dividing evenly, in 2 greased 8-1/2 x 4-1/2-inch (1.5 L)
loaf pans.
7. Bake at 160°C (325°F) for 45-55 minutes. Cool 10 minutes, then remove
from pan and cool completely.
Icing:
1. Beat all ingredients except nuts together until smooth and creamy.
2. Cut cakes in half horizontally. Spread icing between layers and on top.
Decorate top with nuts, if desired.
