2 cups flour
1 1/2 cups sugar
3 1/2 tsp baking powder
1 tsp salt
1/2 cup shortening
1 cup milk
1 tsp vanilla
4 egg whites
Preheat oven to 350 F. Grease and flour two 8 or 9 inch round layer cake pans or a 13 x 9 inch baking dish. Measure flour, sugar, baking powder, salt, shortening, milk, and vanilla into a large mixing bowl. Blend for 30 seconds on low speed, scraping the bowl constantly. Beat for 2 minutes on high speed, scraping the bowl occsionally. Add the egg whites and beat for 2 minutes on high speed. Scrap the bowl occasionally. Pour into prepared pan(s). Bake oblong for 35 to 40 minutes and layers for 30 to 35 minutes or until a wooden toothpick inserted into the center comes out clean. Cool on wire racks.
