Chocolate Graham Crust (recipe follows)
1 (6 ounce) pkg milk chocolate or
semi-sweet chocolate chips
1 (8 ounce) pkg cream cheese, softened
3/4 cup light brown sugar, packed
1/8 tsp salt
1 tsp vanilla
2 eggs, separated
1 cup heavy cream, whipped
Prepare the Chocolate Graham Crust (9 inch pie). Melt the chocolate pieces over hot water. Cool for 10 minutes. Blend together cream cheese, 1/2 cup of the brown sugar, salt, and vanilla in a bowl, using an electric mixer on high speed. Beat in the egg yolks, one at a time. Beat well after each addition. Beat in the cooled chocolate. Beat the egg whites in another bowl until stiff peaks are formed, using an electric mixer on high speed. Gradually beat in the remaining 1/4 cup of brown sugar. Beat until stiff, glossy peaks form. Fold the chocolate mixture into the egg whites. Then fold in the whipped cream. Pour mixture into the Chocolate Graham Crust.
Chocolate Graham Crust: Combine 1 1/2 cup graham cracker crumbs, 1/4 cup brown sugar, packed, 1/8 tsp ground nutmeg, 1/3 cup melted butter or margarine, and 1 (1 oz) unsweetened chocolate, melted and cooled. Mix thoroughly. Press mixture into a 9 inch pie shell. Chill until firm.
