crust:
1 pkg. shortbread cookies (20 cookies)
1/2 cup melted butter
2 Tbs. granulated sugar
filling:
1/2 lb. softened butter (NO margarine!)
1 1/3 cups sugar
4 large eggs
4 oz unsweetened baking chocolate
1 tsp. vanilla or mint extract
whipping cream (optional)
grated chocolate (optional)
Crust:
Crush the cookies. Combine the butter, crumbs and sugar in a mixing bowl.
Pat mixture into a pie shell.
Set aside.
Filling:
Melt the chocolate and cool.
Cream the butter and sugar until smooth.
Add the eggs, one at a time, beating well after each.
Add melted chocolate and mix well.
Add the extract. Beat at high speed with electric mixer a full 5 minutes.
Pour the chocolate filling into the prepared pie shell.
Refrigerate until firm, about 6 hours.
Garnish with dollops of whipped cream and sprinkle with grated chocolate is
desired.
