Chocolate cake
5 oz. semisweet chocolate (couverture)
5 oz. unsalted butter
4 ea. egg yolks
3 ea. whole eggs
4 oz. granulated sugar
2 oz. all purpose flour, sifted
1.Melt Chocolate and butter over double boiler .
2.In a mixer with the whisk attachment, whip egg yolk, and whole eggs with sugar
until you have
the "ribbon stage" - add chocolate mix and mix at low speed until combined.
3. Gently fold in the sifted flour.
4.Pour batter into lightly greased coffee cups , until 3/4 full. refrigerate for
at least an hour .
5. Bake in a preheated 325 degree oven for 15-20 min until toothpick done.
6. Cut out cake with paring knife in the " shape" of a volcano.
