1-1/4 cups (300 ml) graham cracker crumbs
1/3 cup (80 ml) butter or margarine, melted
3 T (45 ml) sugar
1/2 cup (120 ml) plus 2 T (30 ml) semisweet chocolate chips,
divided
8 oz (224 g) cream cheese, softened
1/4 cup (60 ml) firmly packed brown sugar
1/2 teaspoon (2.5 ml) vanilla extract
1 cup (240 ml) whipping cream, whipped
1 pint (480 ml) fresh strawberries
1 teaspoon (5 ml) shortening
Combine first 3 ingredients, mixing well; firmly press onto bottom
and sides of a lightly greased 9-inch (23-cm) pie pan. Bake at 350
(180 ml) for 10 minutes. Cool completely. (Bake at 325 F (160 C)
if using a glass pie plate.)
Melt 1/2 cup (120 ml) chocolate chips; set aside to cool slightly.
Beat softened cream cheese at low speed of an electric mixer until
light and fluffy; add brown sugar and vanilla, mixing well. Add
cooled chocolate, stirring well. Fold whipped cream into cream
cheese mixture; spoon into prepared crust. Chill at least 8 hours.
Set aside 1 strawberry; cut remaining strawberries into thick
slices. Arrange slices over filling; place whole strawberry in
center.
Melt remaining 2 T (30 ml) chocolate chips and shortening
together. Drizzle over strawberries. Chill until set.
NOTE: Although you can use a store-bought graham cracker crust,
I highly recommend following the recipe as is. The crust is much
more flavorful!
