Cornflake Cookies 2 cups sifted flour Preheat oven to 350 F. Grease cookie sheets. Sift together flour, soda, salt, and baking powder. Set aside. Cream shortening. Gradually add the sugars. Beat until light. Add the eggs and the vanilla. Combine dry ingredients and the creamed mixture. Add the coconut and cornflakes. Drop by teaspoonfuls 1 1/2 inches apart on prepared cookie sheets. Bake for 8 to 10 minutes or until delicately browned. Cool about one minute then transfer to wire racks to cool completely. Yield: about 7 dozen cookies |
