Cranberry Oatmeal Cookies
1-1/2 cups flour
1 tsp. each baking soda, cinnamon, vanilla extract
1/2 tsp. salt
1 cup each packed brown sugar, butter or margarine (2
sticks), softened
1/2 cup sugar
2 eggs
3 cups quick-cooking oats or rolled oats
1 pkg. (6 oz.) raisins
1 cup chopped pecans
Directions
Mix flour, baking soda, cinnamon and salt together. Beat brown sugar, sugar and butter in a mixing bowl until creamy. Add eggs and vanilla and beat until smooth. Beat in flour mixture. Stir in oats, raisins and pecans.
Drop dough by rounded tsp. onto an ungreased cookie sheet.
Bake at 350° F. for 9 - 10 minutes or until golden brown. Cool on cookie sheet for 1 minute. Remove to a wire rack to cool completely.
To prepare for future use, drop dough by tsp. onto a cookie sheet and freeze. Remove frozen cookies to a sealable freezer bag and freeze until just before baking.
Makes 4 dozen cookies.
