1 ½ Cups Sugar
1 Cup Margarine or Butter, softened, or shortening
1 Cup Lemon Yogurt or Sour Cream
1 Tbsp. Grated Lemon Peel
1 tsp. Lemon Extract
2 Eggs
3 ½ Cups Flour
2 tsp. Baking Powder
½ tsp. Baking Soda
½ tsp. Salt
Sugar
Heat oven to 350 degrees. Grease cookie sheets. In large bowl, combine
1 1/2 cups sugar and margarine; beat until light and fluffy. Add
yogurt, lemon peel, lemon extract and eggs; blend well. Lightly
spoon flour
into measuring cup; level off. Add flour, baking powder, baking soda
and
salt; mix well. Drop dough by rounded teaspoonfuls 2 inches apart
onto
greased cookie sheets; sprinkle with sugar. Bake at 350 degrees for
10
to 12 minutes or until edges are light golden brown. Immediately
remove from cookie sheets. Makes 6 dozen cookies.
