Sadie's Peanut Butter Cookies
Sadie's Peanut Butter Cookies

Serving Size : 30
1/2 cup butter
1/2 cup lard
1 cup peanut butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla
2 c cake flour -- (or 2 1/2 cups)
1 tsp. baking soda
1/2 tsp. salt
Cream butter, lard, peanut butter, and sugars together.Add eggs and
vanilla and beat until combined. Sift flour, soda, and salt together
and add to above mixture. Shape dough into a flat disk and wrap in
waxed paper. chill for at least 1 hour. Shape dough into large balls
(golf ball sized) and place on parchment-lined cookie sheets. The
cookies spread out and become fairly flat, so leave room between the
balls. Bake at 350 for 13 - 15 minutes or until lightly browned around
the edges. The centers may seem a bit underdone at this point, but
they will firm up. Let cookies cool on the pan 5 minutes before
transferring to a wire rack to cool completely.
Makes 30 cookies.
