Hazelnut Cookies
Ingredients:
3 eggs
1½ cup sugar
1½ tsp. vanilla extract
2 tsp. cognac
2 cups ground hazel nuts
1 tsp. unseasoned bread crumbs
18 hazel nuts cut in half
Directions:
Preheat oven to 300 degrees. Beat the eggs, sugar, vanilla, and
cognac until thick and light. Fold in the ground nuts and the bread crumbs.
Shape teaspoons of the mixture into balls. Place on a greased cookie
sheet, about 1 inch apart. Press a half nut on each. Bake 15
minutes, or until delicately browned. This batch will make about 36 cookies. Be
careful not to burn.
