Chewy Oatmeal Chip Cookies

Chewy Oatmeal Chip Cookies
Ingredients"
1 Stick soft unsalted butter
3/4 c Light brown sugar
1 Egg
1 ts Vanilla extract
3/4 c All purpose flour
1/2 ts Baking soda
1/2 ts Ground cinnamon
1/4 ts Salt
1 1/2 c Rolled oats (regular oatmeal)
1 c Chocolate chips
1 c Dark raisins (optional)
Directions:
Two cookie sheets or jelly roll pans lined with parchment or foil.
Preheat the oven to 350 degrees and set the racks in the upper and lower thirds.
Beat butter and sugar until mixed, then beat in egg and vanilla until smooth.
Stir in flour, soda, cinnamon and salt.
Stir in oatmeal, chips and optional raisins.
Drop by tablespoon on paper-lined cookie sheets.
Bake about 10 minutes, until golden and still moist.
Cool on pans and store in airtight container.
Yield: 2 dozen large cookies
