1 1/2 cups flour
3/4 cup sugar
1 1/2 cups shredded zucchini
1 tsp cinnamon
1 egg
1/2 tsp Baking Soda
1/2 cup butter, softened
1/2 tsp Vanilla
1 cup quick-cooking oats
1 cup granola cereal (any brand will do)
1 12oz bag semi-sweet chocolate chips
Mix butter and sugar until fluffy. Add all other ingredients except the
flour and chocolate chips to the bowl. Add flour in small increments
mixing thoroughly. Add chocolate chips. Drop spoonfuls onto ungreased
cookie sheets and bake in 350 F oven 10 - 12 minutes.
These cookies do spread and should be soft when taken out of the oven.
Because of the high moisture content in the zucchini they are kind of
like oatmeal cookies but more on the "green" side.
