1/2 cup butter or margerine
1 cup white sugar
2 eggs
1 tsp vanilla
1 1/2 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2 cup cornflakes, crumbled
jam or jelly
In a large bowl, cream butter and sugar. Add eggs and vanilla and
mix well. Sift together flour, baking powder, baking soda and salt
and add to creamed mixture. Stir until well blended.
Refrigerate dough until firm. Preheat oven to 350 degrees F. Roll
dough into 1 inch balls and roll in crushed corn flakes. Place on
cookie sheets, about 2 inches apart. Indent the center of each ball
with your thumb and fill with 1/2 tspful of jam or jelly. (I use
red and green for Holidays.) Baker for 15 to 20 minutes or until
firm.
