Candy Cane Cookies
1 cup (2 sticks) butter, softened
1 cup confectioners' sugar
1 egg
1/2 tsp peppermint extract
1/2 tsp vanilla extract
2 1/2 cups flour
1/4 tsp salt
1 cup finely crushed candy canes
3 tbl granulated sugar
1) Preheat oven to 375. Coat cookie sheets with nonstick cooking spray.
2) In large bowl, cream butter & confectioner sugar until light and fluffy. Add egg & peppermint & vanilla extracts; beat until well blended.
3) Gradually add flour & salt; mix until thoroughly blended. Cover bowl woth plastic wrap & chill for 1 hour.
4) In small bowl, combine crushed candy canes & the granulate sugar. Shape into 1 1/2 inch balls, then roll in candy cane mixture, coating completely. Place 2 inches apart on cookie sheets
5) Bake 10-12 min or until golden. Immediately remove to wire racks to cool completely.
