1 cup vegetable shortening
1 cup firm packed brown sugar
1 cup sugar
2 egg
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon salt
1 teaspoon baking soda
3 cup quick cooking oats
1/2 cup finely chopped walnuts
Cream shortening, brown sugar and white sugar. Add eggs
and vanilla; beat well. Mix flour, salt and baking soda
and sift into creamed ingredients. Stir in oats and
walnuts. Divide dough into 3 logs. Wrap logs in waxed
paper and refrigerate at least 1 hour or up to a week.
With a sharp knife, cut each log into slices 1/2 inch
thick. Slice carefully; the dough is very rich and "short"
and has a tendency to crumble. Place on lightly greased
cookie sheet 2 inches apart and bake at 350 degrees for 9-
12 minutes, but don't over bake. Remove from cookie sheet
immediately and cool on a wire rack.
