Easy Cake Mix Cookies

1 box cake mix
2 eggs, lightly beaten
1/3 cup oil

Mix all ingredients, roll into 1 inch balls, place on cookie sheet and flatten
slightly. Bake at 350 degrees for 8-10 minutes.

Note: I have tried several different cake mix cookie recipes, and I have found
this one to be the best! Sometimes I use a small glass dipped in sugar for
flattening the cookies, and this makes them extra nice.

To make sandwich cookies, just prepare your favorite frosting (or use canned if
you prefer) and frost one cookie and place another on top.

These cookies freeze well. But DO NOT OVERBAKE or they'll be crispy and yucky.
Otherwise they are a cookie with a chewy middle and a slightly crispy edge.
