Peanut Butter Cookies - Sugar Free

1/4 cup mashed banana
1/2 cup peanut butter
2 large eggs
3/4 teaspoon vanilla extract
2 tablespoons butter -- softened
1 cup unbleached white flour
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
1 cup chopped peanuts
In a mixing bowl beat together mashed banana, peanut butter, eggs, vanilla
extract, and butter until creamy. Add flour, baking powder, and nutmeg. Beat
well. Stir in chopped peanuts. Drop batter by rounded teaspoonfuls onto
lightly oiled cookie sheets. Press each cookie down with the back of a fork and
again in the opposite direction to indent a checkered pattern into each cookie.
(Wet the fork with cold water occasionally to avoid sticking.) Bake at 375
degrees for 5 to 8 minutes or until lightly browned. Cool on wire racks.
Yields 2 to 3 dozen.
