Lowfat Oatmeal Spice Cookies

1 cup firmly packed brown sugar
1/2 cup granulated sugar
1/2 cup apple butter
1/3 cup vegetable oil
1 egg plus 2 egg whites
2 Tbsp. water
2 Tbsp. vanilla
3 cups QUAKER OATS (quick or old fashioned, uncooked)
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt (optional)
1 cup raisins
Heat oven to 375 degrees. In large mixing bowl, whisk together
sugars, apple butter, oil, egg, egg whites, water and vanilla until well
blended. Add combined oats, flour, baking soda, cinnamon and salt; mix
well. Stir in raisins. (Dough will be soft.) Drop by measuring
tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or
until light golden brown. Cool 1 minute on cookie sheet; remove to wire
rack. Cool completely. Store in tightly covered container. Makes 3
1/2 dozen 2 1/2 inch cookies.
