Curry-Kissed Chicken
Serves 2
Ingredients
1 1/2 tablespoons curry powder
3/4 pounds chicken tenders
Olive oil spray
Salt and freshly ground pepper
3 tablespoons apricot jam
1/4 cup heavy whipping cream
2 tablespoons sliced scallions
Instructions
1. Place curry powder on a plate. Toss the chicken tenders in the curry
powder, coating all sides. Spray a nonstick skillet with olive oil
and heat
over medium-high.
2. Add the chicken tenders and cook 2 minutes per side, until no
longer pink
inside. Add salt and pepper to taste. Remove to a clean plate.
3. Add -1/3 cup water and the jam to the skillet and simmer 30 seconds,
stirring to melt jam. Add cream and simmer 1 minute to thicken. Add
salt and pepper to taste. Spoon sauce over chicken. Scatter scallions on top.
Serve with carrots and rice.
