4 chicken breast filets
flour
2 T. oil
2 T. butter, melted
3/4 c. orange juice
1/4 c. dry white wine
1 c. sliced fresh mushrooms
2 T. chopped parsley
1/2 t. rosemary
Pound chicken breasts with meat mallet.
Coat lightly with flour. Brown in mixture of oil and butter in skillet. Add remaining ingredients. Simmer for about 5 min. or until chicken is tender; remove chicken to warm serving platter. Cook pan drippings until slightly thickened. Pour over chicken.
Garnish with orange sections and avocado slices.
Makes 4 servings.
