4 chicken breasts, sauteed and juices kept in skillet
3 cloves garlic, minced
2 teaspoons fresh ginger, minced
¼ teaspoon crushed red pepper flakes
¼ cup dark brown sugar
¼ cup white vinegar
2 tablespoons soy sauce
4 medium scallions, sliced thin
Move prepared chicken to an ovenproof platter. Cover and keep in warm
oven. Place garlic, ginger and red pepper flakes on cutting board and
mince further to pulverize pepper flakes. Heat skillet with reserved
juices to medium heat. Add the garlic mixture and saute until
softened, about 1 minute. Increase heat to high and add next 3
ingredients. Boil, stirring to loosen browned bits from pan bottom,
until mixture thickens to a light syrup, about 1 minute. Pour sauce
over chicken. Scatter scallions on top. Makes 4 servings.
