Serves 2
2 skinned and boned chicken breasts
1 tsp olive oil
1 clove garlic
1/3 cup coarsely grated Parmigiano-Reggiano
2 tsp capers
1/4 cup dry white wine
Freshly ground black pepper
Wash and dry the chicken. Heat the oil in a nonstick pan, add the chicken and
sauté. Mince the garlic. When the chicken is brown on both sides, add the
garlic and cook for 10 seconds.
Rinse the capers. Add the wine, capers, and pepper to taste to the chicken,
cover and simmer 8-10 min. until the chicken shows no pink at the center.
Sprinkle the cheese of the chicken, cover to melt the cheese, about 1 minute.
Serve over white rice, wild rice, couscous or a spaghetti-type pasta.
