Hoisin Broiled Chicken with Cashews
Hoisin Broiled Chicken with Cashews

1 cup quick-cooking rice
1/2 cup loose-pack frozen peas
4 medium skinless boneless chicken breast halves
2 tablespoons hoisin sauce
2 tablespoons dry roasted unsalted cashew halves
2 green onions -- sliced
Set oven to broil. Prepare rice according to package directions, except salt and
margarine; add peas with rice.
Meanwhile, rinse chicken; pat dry. Place chicken, boned side up, on the unheated
rack of a broiler pan. Stir together hoisin sauce and 2 teaspoons water in a
small bowl. Brush chicken with hoisin sauce mixture. Broil 4 to 5 inches from
the heat for 7 minutes. Turn; brush with sauce. Broil 5 to 8 minutes more or
until chicken is tender and no longer pink. Serve over rice mixture. Top with
nuts and onions. Serves 4.
