4 medium skinless, boneless chicken breast halves
2 tablespoons margarine or butter
1 small onion -- chopped
1/3 cup plum sauce
1 tablespoon vinegar
1 tablespoon water
1/4 teaspoon five-spice powder
1/8 teaspoon garlic powder
hot cooked fettucine or spaghetti -- optional
Rinse chicken; pat dry with paper towels. In a large skillet cook chicken breast
halves in 1 tablespoon of the nargarine or butter over medium heat until tender
and no longer pink, turning once. Remove chicken from skillet, reserving
drippings in skillet. Cover chicken with foil to keep warm.
For sauce, cook onion in reserved drippings until tender. (If necessary, add the
additional 1 tablespoon margarine or butter to the skillet.) Stir in plum sauce,
vinegar, water, five-spice powder, and garlic powder. Cook and stir until heated
through. Serve with sauce and, if desired, hot cooked pasta. Makes 4 servings.
