1/4 tsp salt
1/4 tsp pepper
Flour
1 chicken (cut into serving pieces) -- (3lb.)
2 Tbsps butter or margarine
2 Tbsps olive oil
1 1/2 cups chicken broth
1/2 oz bitter chocolate -- melted
1/2 tsp cinnamon
1/2 cup finely chopped almonds
1/2 cup finely chopped onions
1 cup grated carrots
1/2 cup golden raisins
12 pitted prunes -- finely chopped
1/2 cup chopped fresh parsley
Preheat oven to 325°. Combine salt, pepper and flour.
Dust chicken with seasoned flour. Place butter and
olive oil in a sauté pan. Brown chicken on all sides.
Remove to shallow baking pan. Add 2 tablespoons flour
to pan drippings. Cook until browned, stirring constantly.
Add chicken broth. Stir until thickened. Blend in chocolate
and cinnamon. Add almonds, onions, carrots, raisins and
prunes. Pour over chicken. Scatter parsley over top.
Bake for 1 hour. Serves 4
