6-8 servings
1 cup uncooked brown rice
1 can reduced fat cream of chicken soup
1/2 C. skim milk
1 C. sliced mushrooms
1 small onion, chopped
1/2 t. salt (optional)
1/2 t. ground black pepper
1 t. chili powder
3 C. diced or shredded chicken, cooked
1 (16 oz.) jar Pace Picante sauce
2 C. reduced fat Monterey Jack cheese, shredded
Cook rice. After rice is done (remember brown rice takes longer),
combine soup, skim milk, mushrooms, onion, salt, pepper and chili
powder; mix thorougly. Layer ingredients in greased 13 x 9 baking
pan as follows: chicken, rice, soup mixture, picante sauce and
cheese. Repeat layers. Bake at 350 degrees for 20 min.
