Chicken with Orange-Pecan Rice

1 6.25 ounce package fast-cooking long grain and wild rice
2 cups orange juice
1/4 cup chopped pecans
1 2 ounce jar diced pimentos, drained
4 4 ounce skinless, boneless chicken breasts
fresh parsley, chopped
Heat oven to 350 degrees. Spray a square baking dish, 8x8x2 inches with
nonstick cooking spray. Mix rice and included seasoning packet with
orange juice, pecans and pimentos in baking dish. Place chicken on rice.
Cover and bake 35-45 minutes or until chicken is no longer pink in the
center and liquid is absorbed. Sprinkle with parsley and serve.
Makes 4 servings.
