Raw Vegetable Curry Soup and Smoothie
Raw Vegetable Curry Soup and Smoothie
Ingredients:
1/3 6-oz. can Tomato Paste or raw Tomato
2 Apples
3 Carrots
¼ cup Onion, diced
3 cloves Garlic
2 or 3 Celery ribs
8 oz. Broccoli, pieces, frozen or fresh
8 oz. Cauliflower, pieces
1/2 tsp. Cinnamon, ground
1 tsp. Curry Powder
4 tbsp Flax Seeds, whole (optional)
1/8-1/4 tsp. Stevia, powdered sweetener
12 oz. Cold Water
12 oz. Ice Cubes
Preparation:
Wash and core the apples. Cut into pieces and
place in the container of a high-powered blender
(Vita-Mix type that retains all the pulp). Wash
and peel the carrots, onion, and garlic. Wash the
celery. Cut vegetables into pieces and add to the
apples in the container. Add the broccoli and
cauliflower pieces, ground cinnamon, curry
powder, flax seeds, and stevia powder to taste.
Add ice cubes and one half of the cold water to
help blender run smoothly. Cover and run blender
at high speed until all ingredients are blended
together. Add additional water as necessary. The
Vita Mix tamper will aid the process. Use the
remaining water to rinse off the tamper into the container.
This curried juice may be enjoyed in tall glasses
with straws or served in bowls as a cold soup. We
enjoy this curry as a breakfast smoothie.
