Firecracker Casserole
2 lb. ground beef
1 large onion, chopped
2 tablespooons Chili Powder
2 teaspoons ground Cumin
1 can Ro-Tel Tomatoes with green chilies
1 can Cream of Mushroom Soup
1 teaspoon salt
1 (15 oz.) can Ranch Style Beans
6 Corn Tortillas
1 1/2 cups shredded Monterey Jack Cheese
Cook ground beef and onion in a large skillet until meat is brown, and
onion is tender. Pour off pan drippings.
Add chili powder, Cumin and salt. Stir well. Cook meat mixture over low
heat 10 minutes. Spoon meat mixture into a 13x9x2" baking dish. Layer
beans, tortillas and cheese over meat mixture; save enough cheese to
sprinkle on top. Combine Ro-tel tomatoes with green chilies and mushroom
soup; spread on top of casserole. Sprinkle cheese on top; cover and
refrigerate overnight. Bake, uncovered at 350 degrees for 1 hour.
Note: You can use the tortillas in pieces instead of whole. This makes
a lot and very good and spicy. You can eat it with chips or crackers.
