Cabbage Casserole
1 head cabbage, cut into 1" chunks, cooked and drained
1 can cream of mushroom soup or 2 cups medium Bechamel (white) sauce
8 slices bacon, diced and sautéed until crisp
1 green bell pepper, diced
1-1/2 cups diced Velveeta cheese
1 onion, diced
Topping:
Buttered bread crumbs
Cut cabbage into 1" chunks and cook in salted water until tender. Drain.
Sauté diced bacon until crisp and remove from pan.
Saute diced onion and pepper in bacon grease until tender.
Mix first six ingredients and pour into a large buttered casserole dish. Top
with bread crumbs.
Bake in a preheated 350º F., oven until browned on top.
