Chicken Reuben Casserole
8 boneless, skinless chicken breast halves
1/4 tsp. salt
1/8 tsp. ground black pepper
1 can or pkg. (16 oz.) sauerkraut, well drained
4 slices Swiss cheese
1-1/4 cups Thousand Island salad dressing
Preheat oven to 325º F. Place chicken in a single layer in greased 9" x 13"
baking pan; sprinkle with salt and pepper.
Press excess liquid from sauerkraut and spoon over chicken. Arrange cheese slices over sauerkraut. Pour dressing evenly over the top.
Cover pan with aluminum foil. Bake 90 minutes or until chicken is tender.
Serves 6 to 8.
