Chili Soufflé Casserole
6 pods green chili
1 lb. cheese, grated
1 egg
2 c. milk
1 t. salt
1/2 c. cracker crumbs
Roast chili or use canned chili. Cut
chili into strips. Place a layer of chili strips in dish, then a layer of cheese; repeat until chili and cheese are used.
Slightly beat egg in a bowl; add milk
and salt. Pour egg mixture over chili
and cheese. Sprinkle with cracker
crumbs. Bake in 350° oven for 1 hour.
Makes 6 servings.
