Layered Tortilla Pie
1 lb. lean ground beef
1 med. onion, chopped
1 can (8 oz.) tomato sauce
1 garlic clove, minced
1 T. chili powder
1/2 t. salt
1/4 t. pepper
1 can (2 1/2 oz.) sliced ripe olives, drained
1 T. butter or margarine
6 corn tortillas (6")
2 c. (8 oz.) shredded cheddar cheese
1/4 c. water
Brown beef with onion; drain. Add tomato sauce, garlic, chili powder, salt and pepper.
Add olives. mix well and simmer for 5 mins.
Lightly butter tortillas on one side only; place one tortilla, buttered side down, in a 2 qt.
round casserole. Put 1/2 c. of meat mixture on the tortilla, then sprinkle with 1/3 c. cheese.
Repeat layers, ending with cheese. Pour water around sides of casserole (not over the top).
Cover and bake at 400° for 20 mins. or until heated through. Let stand 5 mins. before cutting. Makes 4 to 6 servings.
