Ultimate Homemade Chocolate Covered Cherries

Ultimate Homemade Chocolate Covered Cherries
1/3 cup soft butter or regular margarine
1/3 cup light corn syrup
1/2 tsp vanilla
1/2 tsp salt
3 1/2 to 4 cups confectioners sugar
1 (1 lb) jar marachino cherries with stems, well drained
2 (8 ounce) milk chocolate candy bars, cut up
Beat together butter, corn syrup, and vanilla in a mixing bowl until smooth, using electric mixer at medium speed. Gradually add the salt and 3 cups of the confectioners sugar. Mix well. When the mixture becomes too stiff to beat, stir with a wooden spoon. Add enough confectioners sugar to make a mixture that can be kneaded. Roll up the mixture and form into a 10 inch roll. Wrap in plastic wrap and refrigerate until firm. Cut the roll into one inch pieces. Then cut each piece into quarters. Flatten each quarter piece in the palm of your hand. Place a cherry in the center of each quarter. Fold up the fondant over each cherry until it is completely covered. Place on waxed paper lined baking sheet. Chill until firm. When cherry fondant is firm, melt the milk chocolate in the top of a double boiler over hot water. Cool slightly. Dip each fondant covered cherry in the milk chocolate. Place on waxed paper lined baking sheets. Refrigerate until the chocolate is set. Store leftovers (if there is any!!) in the refrigerator.
Yield: about 3 dozen cherries
