Impossibly Easy Sausage Breakfast Pie
Makes 6 servings.
1 (12 oz.) pkg. bulk pork sausage
1 sm. bell pepper, chopped (1/2 c.)
1 med. onion, chopped (1/2 c.)
1 1/2 c. frozen hash brown potatoes
1 c. shredded cheddar cheese (4 oz.), divided
1/2 c. original Bisquick baking mix
1 c. milk
1/8 t. pepper
2 eggs
Preheat oven to 400°. Spray 9x1 1/4" pie plate with nonstick cooking spray. Cook sausage, bell pepper and onion in 10"
skillet over med. heat 8 to 10 min.
stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 c. of the cheese.
Spread in pie plate. Stir baking mix, milk, pepper and eggs in med. bowl with wire whisk or fork until blended. Pour into pie plate. Bake 30 to 35 min. or until knife inserted in center comes out clean.
Sprinkle with remaining 1/2 c. cheese.
Bake 1 to 2 min. longer or just until
cheese is melted. Let stand 5 min.
before serving.
Crowd-Size Impossible Easy Sausage
Breakfast Pie: Double all ingredients.
Spray 13x9" baking dish with nonstick
cooking spray. Cook sausage mixture in
12" skillet. Stir Bisquick mixture in large bowl. Bake 35 to 40 min.
