Danishes:
1 1/4 c water
2 Tbsp thawed frozen orange juice concentrate
1/4 tsp orange extract
1 1/4 tsp salt
2 Tbsp granulated sugar
2 Tbsp shortening
3 1/2 c bread flour
2 tsp orange zest
3/4 tsp yeast
Filling:
1- 4 oz. package cream cheese, softened
1/4 c granulated sugar
2 tsp thawed frozen orange juice concentrate
1/4 c raspberry jam
Measure ingredients into baking pan in the order recommended by your
manufacturer. Insert pan into oven chamber. Select Dough Cycle.
Preheat oven to 375 F. Grease baking sheet lightly.
Prepare filling: In a bowl, beat cream cheese together with sugar and
juice concentrate until smooth. Set aside.
Remove dough to a lightly floured board: cover with a large bowl and let
it rest for 10 to 15 minutes. Roll out the dough into a 16" by 10"
rectangle. Cut into 10 strips, 1" wide and 16" long.
On a prepared baking sheet, beginning in the center, coil each strip in
a circle keeping the dough 1/4" apart. Tuck end under. Cover and let
rise in a war, draft free place for 30 to 45 minutes or until doubled in
volume.
Spread tops with 2 Tbsp. filling and in the center with 2 tsp jam. Bake
in a preheated oven for 15 to 20 minutes or until Danishes sound hollow
when tapped on the bottom.
Yields : 10 Danishes
Variations: Try different jams or applesauce for the Danish center.
Tip: Roll the ropes tightly but coil them loosely, leaving a small space
between each, then flatten as you form pinwheel. Otherwise the dough
will puff up and look more like a snail than a Danish.
