Breakfast Quiche
Egg substitute equivalent to 10 eggs
1/2 cup flour
1 pint low fat cottage cheese (2 cups)
1 cup low fat shredded cheese
1/2 cup each (chopped) of at least 4 of your favorite veggies (broccoli, green onion, red or green pepper, cauliflower, spinach, green chiles,
etc.)
8 oz of lean ham or turkey (I use Butterball turkey breakfast patties - cooked to directions on package and then chopped) Preheat oven to 400F.
Combine eggs, flour & cottage cheese in bowl.
Add all of your veggies & meat. Mix together.
Spray nonfat cooking spray into 9x13 glass baking dish.
Pour egg mixture in and top with the shredded cheese (I mix it in with everything else).
Cook UNCOVERED @ 400F for 15 minutes.
Reduce oven to 350 and bake for additional 30 minutes.
You can cut into portions and freeze and when ready to eat just pop into the microwave
