Farmer's Casserole
6 Cups Frozen Shredded Hash Brown Potatoes
1 Cup Grated Monterey Jack Cheese w/ Jalapeno peppers
1 Cup Diced Fully Cooked Ham
¼ cup Sliced Green Onion
4 Beaten Eggs
1 12-ounce Can Evaporated Milk (can use Skim)
1/8 teaspoon pepper
¼ teaspoon salt
Grease a 13x9x2-inch baking dish (also works in an 8x8 pan, just thicker, this is what I usually use). Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham and green onion.
In a medium mixing bowl, combine eggs, evaporated milk, pepper, and salt.
Pour egg mixture in dish. Freeze.
To prepare to serve, thaw and preheat oven to 350 degrees F. Bake, uncovered for 40-45 mins or until center appears set. Let stand 5 mins before serving
